Recipe column: How to handle dough safely

It’s tempting to lick the bowl or spoon after mixing up cookie dough or cake batter, but for safety sake don’t cave in.

Food safety experts have warned against eating raw dough when raw eggs are in the mixture, but now the flour itself may make us sick because of contamination with E. Coli.

Flour comes from grain that has not been treated to kill bacteria. It is a raw agricultural product that may have become contaminated from manure if animals do their business in the field and the bacteria remains after harvesting and milling.

Flour recently became identified as a potential source of contamination, especially when handling raw dough and not washing hands or by eating the raw dough.

Here’s additional safety tips to put into practice:

• Bake items made with raw dough or batter before eating them. Follow the recipe or instructions on the package.
• Do not eat any raw cookie dough, cake mix batter or any other raw dough or batter product that is supposed to be cooked or baked. Even a small amount could make you sick.
• Wash hands, work surfaces, and utensils thoroughly after contact with flour and raw dough products with hot water and soap.
• Keep raw foods separate from other foods while preparing them to prevent any contamination. Be aware that flour may spread easily due to its powdery nature.
• Restaurants and child care facilities should not give people raw dough to play with or eat.

The following recipe is a great snack for kids heading back to school. Remember, no sampling of the raw product. You’ll have to wait patiently until they are baked.

Chewy Oatmeal Bars
2 ¼ cups quick or long-cooking oats
½ cup flour
½ teaspoon baking soda
½ teaspoon vanilla extract
5 tablespoons margarine, softened
¼ cup honey
¼ cup brown sugar
1 cup raisins
Directions:
1. Preheat oven to 325 degrees. Lightly coat a 8×8-inch pan with cooking spray.
2. In a large mixing bowl, combine all ingredients. Stir until well blended.
3. Press mixture into pan and bake 18 to 22 minutes or until golden brown. Be sure to wash hands, work surfaces, bowls, and utensils carefully.
4. Cool 10 minutes, then cut into 16 bars. Let bars cool in pan before serving.

Note: If your family does not like raisins, use any combination of dates, cranberries, miniature chocolate chips, sunflower seeds, or chopped nuts. You can easily double this recipe using a 9×13-inch baking pan. Tightly wrap bars for a send-along healthy snack.

KCKCC golfers second in opener; six Blue Devils place in top 14

Kansas City Kansas Community College got the 2016 golf season off to an outstanding start, placing six golfers in the top 14 finishers in the Ottawa Invitational at Eagle Bend in Lawrence Monday and Tuesday.

The well-balanced effort earned the Blue Devils a second place finish in the 9-team tournament otherwise made up of four-year colleges and universities.

Morningside College of Sioux City, Iowa, took top honors with rounds of 292 and 291 for a 7-over par 583. KCKCC also broke 300 in both rounds with 299 and 296 for a 595 total. Kansas Wesleyan was a distant third at 609 followed by Bethany, 615; Ottawa, 616; Bethel, 634’ Avila, 639; Haskell Indian Nation, 678; and Bethel’s B team, 681.

Sophomore Jeremy Dunham of Derby (75-74-149) and freshman Nick Wagner of Wichita Maise (74-75-149) tied for fifth to lead the Blue Devils. Sophomore Evan Shartzer of Blue Valley North (76-74-150) was another stroke back in a tie for ninth while freshman Bobby Armstrong of Wichita Bishop Carroll (76-75-151) was yet another stroke back in a tie for 11th.

Sophomore Marc McClain of Bonner Springs (80-73-153) and freshman Micah Morris of Guthrie, Okla. (74-79-153) tied for 14th place while freshman Cody Foster of Shawnee Heights (90-83-173) finished 48th and sophomore Jack Barnhart of Hesston (92-86-178) finished 54th.

The Blue Devils will return to action Monday and Tuesday when they compete in the Coffeyville Invitational in Bartlesville, Okla.

Sporting KC bows out of CONCACAF Champions League after 2-1 defeat

Sporting Kansas City crashed out of the Scotiabank CONCACAF Champions League with a 2-1 defeat to Vancouver Whitecaps FC on Tuesday at Children’s Mercy Park in Kansas City, Kan.

Diego Rubio scored for the hosts shortly after halftime, but a 41st-minute goal from Erik Hurtado and a 93rd-minute strike from 15-year-old Alphonso Davies clinched first place in Group C for Vancouver and eliminated Sporting Kansas City from North America’s premier club tournament.

Tuesday’s match was delayed for two hours in the 35th minute as inclement weather passed over the Kansas City area.

Manager Peter Vermes made wholesale lineup changes from Friday’s 3-3 draw with the Houston Dynamo.

The back line featured two loanees from the Swope Park Rangers as Amer Didic partnered Ike Opara in central defense and left back Tyler Pasher earned his Sporting KC debut.

Rangers midfielder Ualefi patrolled the center of the park alongside Emmanuel Appiah and captain Paulo Nagamura, while forward Diego Rubio was flanked by Cameron Porter and Connor Hallisey up top. Goalkeeper Tim Melia returned from a back injury to make his first appearance since July 24.

Vermes’ men started brightly, creating a flurry of chances within the first 10 minutes. Hallisey’s left-footed volley from 30 yards dipped narrowly over the crossbar before Rubio rifled just wide after turning his defender on the left edge of the box. Pasher showed his promise shortly thereafter, crossing low to Porter who skied his shot from a tight angle.

The contest burst to life after the two-hour weather delay as both clubs traded attacking punches. Vancouver drew first blood in the 41st minute when Davies squared low across the face of goal to Hurtado, who slotted home for his second goal in as many Champions League matches vs. Sporting KC.

Forward Kris Tyrpak, on loan from the Swope Park Rangers, made his Sporting KC debut after halftime and was immediately involved in the team’s bid for an equalizer. Nagamura powered down the right endline and cut the ball back to Tyrpak, who couldn’t quite direct his shot on target.

Rubio would draw the sides level in the 55th minute, collecting a cutback pass from Seth Sinovic, creating a pocket of space on the edge of the penalty area and firing into the net off the far post. The 23-year-old Chilean has now scored in all three competitions for Sporting KC this season, opening his Champions League account after previously netting in the MLS regular season and Lamar Hunt U.S. Open Cup.

Vancouver almost reclaimed the lead just two minutes later, but Melia produced a phenomenal kick save to deny Fraser Aird. Nagamura then went close at the other end, seeing his long-range blast palmed wide by goalkeeper Spencer Richey.

The visitors would steal all three points – and seal progression to next year’s CONCACAF Champions League quarterfinals – with a fortuitous goal in the 93rd minute. Davies cut into the middle from the right side and unleashed a powerful strike that deflected off Ualefi and into the net, marking the second straight game that Sporting KC has conceded in second-half stoppage time.

Tuesday’s result knocks Sporting Kansas City out of the CONCACAF Champions League group stage with a game to spare. The Group C finale will take place Oct. 19 when Trinidadian outfit Central FC travels to Children’s Mercy Park for a 7 p.m. kickoff.

Sporting Kansas City now looks ahead to Sunday’s pivotal MLS regular season meeting with the second-place LA Galaxy (11-4-14, 47 points) at Children’s Mercy Park.

Currently fifth in the Western Conference standings, Sporting Kansas City will continue its playoff push against a Galaxy side that acquired Landon Donovan last week after the U.S. soccer legend came out of retirement. Sunday’s nationally televised showdown will kick off at 1 p.m. on FOX, and a limited number of tickets are still available via Ticketmaster.com or by calling 888-4KC-GOAL.
